Hence the enthusiastic acceptance and adaptation of Indonesian cuisine... But Antonius might really enjoy listening to the language, Papiamento, which is an amalgam of Dutch, Portuguese, English, Spanish, African languages and other stuff. Young Dutch ladies by the KLM-load are also a draw, as I understand it.

But the problem was deeper. I have come to the conclusion that Lauren Gras might make a marvelous Chef de Cuisine, but not a Managing Chef. The chef should be the face of the restaurant. As Dutch Muse points out we were told again and again that the chef was "focused" on his line cooking.

So we emptied it the best we could to defrost it, and have been eating some unearthed treasures as a result. (We also dumped or threw away a few unearthed "treasures" as well.) Today's lunch, Frikandel, a type of skinless Dutch sausage, served with mayonnaise and curry ketchup.

One such example is the bold Dutch custom of the Rijsttafel. When the Dutch expanded their empire to Indonesia, they were swept up by the native cuisine it discovered. Excited by this new world of creative cooking, their appetites increased, and so did the number of dishes at the elaborate table.

A search turned up the Nederlander's Grill in Orange City, as well as a Dutch Bakery, so I have high hopes for that destination. I enjoyed the Dutch food I had last year in Holland, MI, and it would be fun to explore the cuisine further. It's a business trip, so the food isn't the objective -- but still nice to enjoy one's food while on the road.
